Why a Wolf simmer burner will not hold a low flame

A simmer that roars or blows itself out is almost always gas pressure, a bypass setting or a blocked port — not a dead valve. What each one looks like, what to check on a Phoenix range, and where a manometer takes over from guessing.

A Wolf range is bought for the low end. Anyone can make a burner roar; the reason people pay for this equipment is a flame that will hold a pan of stock, a custard or a pot of Arcadia citrus marmalade at a bare tremble for an hour without scorching the bottom. So when the simmer setting starts behaving as two positions — full noise or nothing — it feels like the whole appliance has failed, even though the burner still lights and the oven still bakes.

Almost every simmer complaint we get in Phoenix resolves to one of five things, and only one of them is a part that has actually broken. The rest are settings, supply or dirt.

What a simmer burner actually is

The low end on a Wolf sealed burner is not just the main flame turned down. The larger burners are dual-stacked: an outer ring for power and an inner ring of much smaller ports that carries the low settings. When you turn past the point where the outer ring drops out, the valve is routing gas through a separate restricted path — a bypass — sized so that the inner ring gets a small, steady, predictable volume.

That matters diagnostically, because it means the low flame and the high flame depend on different things. A burner can be perfectly happy at full output and completely unable to hold a simmer, and that is not a contradiction. It is a clue: whatever is wrong lives in the bypass path, the small ports, or the pressure the appliance is being fed.

The five things that cause it

Supply pressure. A gas cooktop wants a specific manifold pressure, measured in inches of water column at the appliance tap. Too low and the inner ring cannot sustain a flame front; too high and the low setting is not actually low. Pressure that sags only when several appliances run at once points upstream — an undersized run, a tired regulator, or in a condo, a building riser that everyone on the stack is sharing. This is why we take a reading with one burner lit and then with everything lit; a single-point measurement hides the fault.

Bypass adjustment. Each valve has a bypass screw that sets the low limit. It is not a user control and it does not drift on its own, but it does get moved: during a propane conversion, during a previous repair, or by somebody who was “adjusting the flame”. A range that has never simmered since it was installed usually has this as its whole story.

Blocked inner ports. The simmer ports are small, and a boil-over that ran under the cap bakes onto them. Half a ring of blocked ports gives you a flame that lights, spreads unevenly and then extinguishes as soon as the pan sits down over it. Out here, ordinary household dust and haboob grit do the same job more slowly.

Cap and grate seating. A burner cap sitting a fraction out of true throws the flame pattern sideways. It is the cheapest fault on this list and the easiest to miss, because the cap looks seated until you lift it and feel the locating pins.

A worn valve. Real, but last on the list. A valve whose taper has worn will lose repeatability at the low end and often feels gritty or loose through the turn. This is a replacement, not an adjustment.

What you can check in ten minutes

Before anyone comes out, three things are worth doing, and none of them need a tool you do not own.

  • Compare burners. Light each one and take it down to its lowest setting in turn. If every burner behaves badly, think supply. If one misbehaves, think that burner.
  • Lift and reseat the cap. Cold burner, gas off. Take the cap off, check the locating pins are clean, put it back, and feel it drop into place rather than rest on debris.
  • Look at the flame colour. Steady blue with a small soft tip is right. Yellow, lazy tips or soot on the bottom of a pan mean the mix is wrong, which usually means air, orifice or pressure — and is worth mentioning on the phone because it changes what we bring.

What is not worth doing is poking anything metal into a port. The dimension of that hole is the calibration.

What a technician does that you cannot

The manometer is the dividing line. Everything above this point is observation; from here on it is measurement. A manometer on the manifold tap turns “it seems weak” into a number that either is or is not within spec, and that number decides whether the next move is a bypass adjustment, an orifice, a valve, or a conversation with whoever owns the gas line.

The same visit checks the bypass setting against the specification for that model and fuel, verifies the orifice size actually fitted, and cleans the inner ring properly with the burner out rather than through the grate. On a Camelback-corridor condo we will also note the pressure at the riser in writing, because that reading is the only thing that gets a building manager to act.

When it is worth calling

If the whole cooktop lost its low end at once, or if it never had one since installation, or if the flame is yellow and sooting — call. Those are pressure, conversion and mixture faults, and they are not user-serviceable in any meaningful sense.

If one burner has gone off after a boil-over and the others are fine, try the cap and a gentle brush first. That one is genuinely worth ten minutes of your own time, and if it works you have saved yourself a visit, which is a good outcome for everybody.

Follow-up questions

Should the flame go out completely on the lowest setting?
No. On a working dual-stacked burner the lowest setting holds a small, stable ring of blue flame that will sit under a pan for an hour without going out. A flame that lifts off, flutters and dies is not a very low simmer — it is a fault.
Can I clean the simmer ports myself?
You can clear them with a soft brass brush and a wooden toothpick once the burner is cold and the gas is off at the valve. Do not run a drill bit, a needle or a paperclip into a port: enlarging or scoring an orifice changes the gas-to-air mix permanently and cannot be undone in the field.
One burner simmers fine and another does not. Is that still a pressure problem?
Usually not. If the rest of the cooktop is well behaved with everything else lit, supply is probably fine and the fault sits in that one burner — its bypass adjustment, its ports, its cap seating, or its valve.
Does converting to propane affect the simmer?
Very much. Propane runs at a different pressure and needs different orifices and bypass settings. A conversion done to the wrong side of the kit is one of the most common reasons a range that has never simmered properly has never simmered properly.
